Overview

OVERVIEW

The Cook prepares and serves high quality food in accordance with pre-planned menus and in keeping with regulatory standards and Community policies and procedures.

 

QUALIFICATIONS

 

Education, Experience, and Certifications

  • High school diploma or GED
  • Current ServSafe certification
  • Minimum of one (1) year of food preparation in a large facility setting, e.g.; hospital, skill nursing
  • Supervisory and senior living experience preferred

JOB DUTIES

Meal Preparation

  • Prepares meals following the pre-determined menu and corresponding recipe ensuring that each entrée is at least 60% freshly made versus pre-packaged
  • Takes care to ensure food and beverage temperature requirements are met
  • Ensures a food and beverage product that is appetizing and appealing to the eye with ensuring food is not touching on the plate, sauces are not extreme and garnished consistently
  • Ensures Residents with dietary restrictions are attended to and the requirements met per policy
  • Sensitive and respectful of Resident preferences as appropriate

Supervisory

  • Acts as the shift supervisor in directing dishwasher or other dietary assistants when Director of Dining Services is not present during the shift worked
  • Ensures kitchen is fully clean and in organized condition if the last person upon closing for the day

Regulatory and Community Policy and Procedure

  • Conduct all required cleaning of the kitchen daily and/or as needed
  • Ensures refrigerated foods are stored in accordance with regulation with proper labeling, wrapping and placement in the refrigeration unit
  • Ensures dry storage regulations are met related to lids, placement of food on carts
  • Checks dry storage and refrigerator units and disposes of expired foods

Safety and Infection Control

  • Reports any equipment failures or disrepair promptly to supervisor
  • Exercises safe practices per ServSafe and Community policy
  • Ensures chemicals are locked securely when not in line of vision/being used
  • Utilizes proper cleaning methods and chemicals to ensure proper infection control as appropriate for areas of food service and preparation

Paperwork

  • Completes all forms necessary to document dietary procedures
  • Reports accidents and incidents immediately to supervisor

Communication and Observation

  • Reports all issues and Resident complaints promptly to Management
  • Maintains confidentiality to protect the privacy of Residents

PHYSICAL STRENGTH REQUIRED

Frequent body movements include lifting, moving, transferring, bending (static forward bending), stooping, squatting and reaching. Able to do heavy lifting, pushing, pulling and/or carrying of objects weighting up to fifty (50) pounds unassisted with twisting and turning of trunk. Ability to stand and walk for prolonged periods of time.

 

ENVIRONMENTAL CONDITIONS

Because the essential functions of the job may require general involvement in our health care facilities, including but not limited to exposure to AIDS, HIV and Hepatitis B viruses involving Risk Classification Categories 2 and 3, environmental and safety conditions will fluctuate. Direct and proper handling of cleaning chemicals is part of this responsibility on a daily basis. To be qualified for the position, a person will have the ability to work in this type of environment without posing a direct threat to self or others.
